"Pho cuon" (Rolled Rice Noodle) in Ngu Xa village, Hanoi

"Pho cuon" is a street dish with rice noodle, meat, vegetables, like others "Pho". But, it has its own flavor that is very weird with your mouth.
Ngu Xa village is a craft village which is located beside Truc Bach, in the west of Thang Long, now is Ngu Xa street, belonging to Ba Dinh district, Hanoi. It is famous for bronze casting, but the traditional craft has been narrowed, instead a new neighborhood with many well-known food service, especially Rolled noodle that has attracted many tourists come to enjoy.
Like others "Pho", "Pho cuon" has also rice noodle, meat, vegetables. But, it is not eaten with broth, it is served with sauce that make the special point for this dish. Rice noodle is rolled with meat and vegetable. The sound is incredibly simple, the secret of this dish lies in marinating meat and making sauce. Marinating meat is not too long and not too fast, about 30 minutes. The recipe is the secret of each restaurant to create a unique flavor, so does sauce. When you see "Pho cuon" for the first time, the green of vegetable, the white of rice paper and rice noodle, mixing the brown of fried beef, the cool colors'll make you feel cooler when seeing it. That is seeing. So, how about eating?.
Rice noodle is thin and soft, which is rolled with fried beef and vegetable, very simple. When eating, the cool taste of vegetable and rice noodle'll mix with the hot taste of fried beef. Not only that, the sour, spicy, sweet, salty taste of sauce'll make you eat easily. It is same as grilled chopped meat but everything is fresh. That makes you feel cool when eating.
